easy chocolate granola
a rich and delish choccy granola recipe
this simple base recipe becomes richer with cocoa and flakey salt. here’s to starting the day or snacking in a way that feels as good as it tastes.
this granola cooks in less than 30 minutes and takes 5 minutes to prep, this is the perfect way to meet your week feeling prepared and satisfied.
here's the recipe
ingredients.
4 cups of whole rolled oats
1/2 cup oil (i like coconut or olive oil here)
1/2 cup honey/maple
1/3 cup cacao
1 tsp vanilla
1 tsp sea salt
1 tsp flakey salt (optional)
1/2 cup dark chocolate chips (optional)
1/2 cups coconut flakes (optional)
method.
pre-heat oven to 175 celcius / 350 fahrenheit and line a baking tray with baking paper.
into a large bowl, combine 4 cups of whole rolled oats,1/2 cup oil, 1/2 cup honey/maple, 1/3 cup cacao, 1 tsp vanilla, 1 tsp sea salt.
when the oats are evenly coated in choccy, pour the oat mixture onto a lined baking tray and spread evenly.
if you care to, you can tuck the oats into a rectangle shape using a spoon or spatula so that the stray oats don’t burn in the oven - this step is optional.
this granola cooks in 20-25 minutes, depending on your oven/tray. start with 20 and add a few more minutes if needed.
put the tray into the oven and set a timer for 20 minutes. check the oats a couple of times, stirring every 7 minutes or so, to make sure they are cooking evenly. you may want to cook a little longer if not toasted enough.
when smelling fragrant and starting to feel more crispy, remove from the oven, sprinkle over 1 tsp of flakey salt (optional).
cool completely and add your preferred toppings, 1/2 cup dark chocolate chips (optional) and/or 1/2 cups coconut flakes (optional) before storing in an air tight container for up to two weeks.

serve with yoghurt and berries or with a milk of your choice - whatever makes you feel good.
i love the approach of cooking for what you need and adding what you like. for example, if you feel better on higher fat and lower carb, feel free to sub out some of the oats for nuts and seeds or add nut butter in place of some of the sweetener. i’ll do more posts on how to tailor recipes to preferences soon!!
